Vegetable oils are usually obtained by pressing oil seeds (for example, peanut, sunflower, etc.) or even from fruit (for example olive oil or palm oil).

Edible oil par excellence is olive oil: it is a product originating from the agri-food tradition of the Mediterranean, although it is also produced in other regions characterised by a Mediterranean climate.

Virgin olive oil is obtained from the mechanical pressing of olives. It is characterised by a high content of monounsaturated fats.
